The principle of modified atmosphere packaging (MAP) is to replace the air in the packaging bags and boxes with modified anti-corrosion gas (mixing 2 to 4 gases according to the nature of the food), thereby changing the internal environment of the packaged food, inhibiting the growth of bacteria, slowing down the metabolic rate and Extend the freshness or shelf life of food.
